An Easy Potluck Dessert
I first made this recipe when faced with a company potluck for well over 100 guests.
What kind of dessert to serve to so many people?
Definitely a finger food.
Cookies could have fit the bill, but I felt these chocolate Rice Krispie treats calling.
I ended up making three large pans of these treats…and bringing not even a crumb home.
Multiple friends had to know what was in the recipe…and these friends were grown women who cook a broad range of recipes themselves.
Needless to say, chocolate Rice Krispie treats were a shining success!
Easy Chocolate Rice Krispie Treats with Chocolate Chips
What I love about these chocolate Rice Krispie treats is that they are sooooo chocolate-y.
The almond extract accents this chocolate so well.
And chocolate chips and cocoa powder work together to create a wonderfully deep chocolate flavor.
Chocolate Rice Krispie Treats with Cheerios
But aren’t Rice Krispie treats made with *ahem* Rice Krispies?
Yes. And–in the case of this recipe–no.
We use chocolate-flavored Cheerios to whip up this amazing treat.
Don’t have chocolate Cheerios available? No worries! Substitute any type of chocolate cereal (Cocoa Pebbles, chocolate Rice Krispies, etc.) for similar results.

Tools Needed
These tools are required and/or helpful for making this recipe:
- a 13″x9″ baking dish
- reusable silicone baking mat(highly recommended!)
- a large stock pot
- a large mixing bowl
- a spatula
- a large spoon for mixing
Ingredients for Chocolate Rice Krispie Treats
- 5 Tbsp. salted butter
- 1 tsp. pure vanilla extract
- 1/2 tsp. almond extract
- 1/4 tsp. sea salt
- 6 cups mini marshmallows
- 1 cup chocolate chips
- 2 1/2 Tbsp. cocoa powder
- 8 cups chocolate-flavored Cheerios (can substitute chocolate Rice Krispies or Cocoa Pebbles)
How to Make Chocolate Rice Krispie Treats with Chocolate Chips
- Measure the 8 cups of chocolate Cheerios into a large mixing bowl. Set aside.
- Line a 13″x9″ baking dish with a reusable silicone baking mat. (I don’t recommend using parchment paper. So if you do not have a silicone baking mat, simply grease the pan.)
- In a large stock pot, melt the butter over medium-low heat.
- Reduce the heat to a simmer. Add the vanilla extract, almond extract, and sea salt and mix well.
- Stir in mini marshmallows, chocolate chips, and cocoa powder. Stir continuously until the marshmallows and chocolate chips are melted and the cocoa powder is fully incorporated.
- Remove from the heat.
- Immediately pour the chocolate mixture over the bowl of chocolate Cheerios. Mix until all Cheerios are evenly coated.
- Press firmly into prepared pan. (I like to use an empty butter wrapper that still has some butter on it to press down the treats without getting them stuck to my hands. You can also use a spatula.)
- Let cool completely before cutting into squares and serving.

Recipe Variations and Substitutions

How to Make Ahead
Chocolate Rice Krispie Treats are perfect for cookouts and other group party occasions! They are easily made ahead and can actually retain their flavor and texture for several days if stored at room temperature.
Simply make sure to allow the treats to cool completely before storing them in an airtight Ziplock food bag.
Storage Instructions
Keep these chocolate Rice Krispie treats in an airtight Ziplock storage bag at room temperature for up to a week.
After a few days, the texture of the treats may change, but the flavor will remain intact.
