Breadsticks pair so well with many main dishes, but the ones that truly shine are the dishes with lots and lots of sauce. Dipping homemade yeast breadsticks into that sauce–oh, delightful!

But add garlic and parmesan cheese to the breadsticks themselves and you’ve stepped up your breadstick game immeasurably.

And that’s exactly why this recipe for homemade breadsticks with garlic and parmesan cheese has become a favorite in our home.

Not only do these breadsticks preserve the traditional flavor of yeast breadsticks without the extra rise time, they also delight the tastebuds with their perfect blend of seasonings.

Homemade Garlic Parmesan Breadsticks From Scratch

While buying packaged breadsticks from the store can be convenient, the truth is that homemade breadsticks from scratch really aren’t that complicated–especially when you use a simple recipe without hours of rise time, like this Quick No-Rise Homemade Garlic Parmesan Breadsticks recipe.

What makes these homemade garlic breadsticks amazing is that they have garlic both brushed on the outside (in the form of garlic butter) and kneaded into the very dough itself.

Homemade Yeast Breadsticks with Instant Yeast

Another easy switch that these breadsticks make is using instant yeast rather than active dry yeast.

Why?

According to King Arthur Baking, “Instant yeast works faster. Not only does it skip the proofing/dissolving step, instant yeast simply ramps up more quickly than active dry.”

While I originally chose instant yeast for this breadstick recipe because it was the only yeast I could find in my little neighborhood hole-in-the-wall grocery store (hello, East Asia!), I quickly learned that using this type of yeast meant I could bypass a significant amount of time that breadsticks often require: rise time.

Simply putting these breadsticks to proof on a heating oven was enough time for them to rise adequately for our breadstick needs.

Quick No-Rise Garlic Parmesan Breadsticks

So can you really make no-rise homemade yeast breadsticks?

Our family’s answer is yes.

I’ve already explained the simple exchange we have made in trading active dry yeast for instant yeast in this homemade garlic breadsticks recipe.

But the other important factor in breadsticks being fine without time to rise is that breadsticks aren’t exactly the same as other types of bread.

Traditionally, breadsticks are more like sticks than loaves of bread. They’re supposed to hold up to being stretched and handled and dipped.

And while everyone loves a soft, fluffy breadstick, using up a lot of a baker’s time to allow that breadstick to rise isn’t exactly mandatory.

Ingredients for Quick Homemade Garlic Parmesan Breadsticks

Yeast Breadstick Dough

  • 1 cup hot water
  • 2 Tbsp. unsalted butter, softened
  • 1/4 cup granulated sugar or honey
  • 1 tsp. sea salt
  • 1 egg
  • 1 Tbsp. instant yeast
  • 3 1/4 cups all-purpose flour
  • 1/2 Tbsp. garlic powder

Garlic Butter Seasoning

  • 4 Tbsp. salted butter
  • 1 Tbsp. oregano
  • 1/2 cup grated real parmesan cheese
  • 1/2 Tbsp. finely minced garlic

How to Make No-Rise Garlic Parmesan Homemade Breadsticks

  1. First, prepare the garlic butter seasoning so that the flavors can meld together while you prepare the breadstick dough. In a small saucepan, heat the salted butter, oregano, parmesan cheese, and minced garlic until the butter melts and begins to bubble. Turn off the heat and let the garlic butter seasoning sit.
  2. In a medium-sized mixing bowl, mix together the hot water, unsalted butter, sugar or honey, and salt until the butter is melted. Cool slightly. Add the instant yeast and egg to the dough and mix well.
  3. Stir in the all-purpose flour until a soft dough forms.
  4. Sprinkle the garlic powder on top and knead it into the dough until evenly distributed.
  5. Divide the dough into four equal parts. Divide those parts into six equal pieces. Roll each piece into a long rope. Place on a baking sheet lined with a reusable silicone baking mat or parchment paper.
  6. Using a basting brush, rub the garlic butter seasoning on top of each breadstick.
  7. Heat the oven to 375F. Place the pan of breadsticks nearby to proof while the oven is heating up.
  8. When the oven is ready, bake the breadsticks for 10-12 minutes, or until the middle of the breadstick is no longer doughy.
  9. Serve hot, with olive oil or garlic butter for dipping.

Make-Ahead Instructions

These breadsticks are best eaten fresh from the oven. However, if you must make them ahead of time, cool completely and store in an airtight Ziplock bag. When it is time to eat, reheat them in the oven for a few minutes.

Variations to This Recipe

  • Use Italian seasoning instead of oregano in the garlic butter seasoning.
  • Sprinkle chopped fresh herbs into the breadstick dough and/or on top.
